Draper Girls Country Farm is one of the few licensed non-pasteurized cider mills left in the state of Oregon. Throughout the season the cider will have slightly different flavors such as tartness and sweetness. Early in the apple season the cider will have a slight to moderate kick to it because the apple varieties available are more on the tart side. Mid-season to late season, our ciders will be more on the sweet side, at this time in the season there are over thirty varieties to choose to make the perfect blend. No matter what time of the year you purchase your cider you will not be disappointed, it’s a flavor burst that will keep you coming back for more.
If you are not sure what the difference between 100% pure non-pasteurized apple cider and apple juice that you purchase in the store is we will give you a little history. Our ciders are in their “raw” form (a pure mixture of apples, pears, cherries or grapes), we do not heat or cook to kill the naturally occurring yeasts found in the fruits. Since we do not heat or pasteurize, our cider must be kept refrigerated or frozen to prevent fermentation which usually occurs about one week after it’s pressed. If fermentation is allowed to start, the cider will begin to become slightly carbonated and eventually become so-called hard cider as the fermentation process turns sugar into alcohol. Pasteurization is a process of heating a food, usually liquid, to a specific temperature for a definite length of time, and then cooling it immediately, it is not intended to kill all micro-organisms in the food. Instead pasteurization aims to reduce the number of viable pathogens so they are unlikely to cause disease.
At Draper Girls Country Farm, your health and safety are our utmost concern which is why we choose to follow a very strict licensing processes. Our cider mill is located in it’s own building where it meets all regulations put into place by the USDA. Our apples, cherries, grapes and pears are hand-picked from the trees (never from the ground), sorted, washed to prepare for pressing and constantly tested. Once pressed, cider is funneled into huge one-hundred gallon containers in our cold storage where it’s then hand jugged and labeled.
If you’ve been to our farm you have seen all of the freezers throughout the stand, those are all filled to the brim with cider. Our frozen cider is ideal for those of you who plan on making a day out of your visit to the farm. It’s recommended if you don’t purchase our frozen cider you bring an ice chest to keep your cider cold for the rest of your trip.
